Homemade White Bean Soup with Parsley and Bread
 
Both my husband and I are Italian, and have family in Italy. Whenever I enjoy this dreamy soup I’m reminded of our time spent in Tuscany. It’s warm, comforting, nutrient-dense and packed with a secret ingredient (collagen!) to heal the gut and keep your skin radiant.
 
INGREDIENTS
2 15 oz cans of cannellini beans (Eden Organic Brand)
2 tbsp olive oil
1 bay leaf
1 onion, chopped
1 clove garlic, minced
2 carrots, diced
8 cups chicken stock
1 bunch of kale, de-ribbed and cut into 1 inch ribbons
1 (28oz) jar or can of diced tomatoes, drained
1 inch piece of kombu
1 Tbsp collagen powder/bowl (Great Lakes)
sea salt and pepper to taste
 
DIRECTIONS
In a large soup pot, heat olive oil and add onion, garlic, carrots and bay leaf. Cook at medium heat until onions are translucent. Add stock and bring to a boil. Add kale, tomatoes, beans, salt and pepper. Reduce heat to low and allow to simmer for 20 minutes. Stir 1 tbsp of collagen powder into each bowl of soup just prior to serving.
