If you like fries, you’ll love this healthy upgrade to a traditional American favorite. Yuca is nutrient dense and easy to prepare – use it just like you would use a potato. Simple, healthy and delicious!

INGREDIENTS
1  -2 yuca root, peeled
2 tbsp olive oil
sea salt to taste

DIRECTIONS
Preheat oven to 400 degrees.

Slice the yuca into fries or wedges. Then bring to a boil in a pot of water over high heat. Lower the heat to medium and cook, uncovered, for 15-20 minutes or until slightly soft.

Strain the yuca and place on a cookie sheet lined with parchment paper. Drizzle with olive oil and sea salt, to taste.

Cook another 10-15 minutes, or until roasted.
