I love this recipe for Healthy Pumpkin Pie! Pumpkin is high in fiber which helps to remove toxins and keep things moving (pooping!). Also on the ingredient list is coconut cream, a decadent and delicious way to add a little belly support to your menu. While definitely a sweet treat, the natural sweeteners like maple syrup make this guilt-free dessert my go-to recipe for holiday gatherings.
15 oz organic pumpkin puree
3 large eggs
1/2 cup coconut cream
1/2 cup maple syrup
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves
1/4 tsp allspice
1/4 tsp fine sea salt
Preheat the oven to 350 degrees.
Combine all of the ingredients in a large bowl and beat with a whisk. Add the filling to your favorite pie crust (or try my gluten-free version here).
Bake for 55 minutes, or until the center just sets. Leave on the counter to cool completely (a minimum of one hour). Chill in the fridge for three hours, uncovered, to set the pie before serving.
