Spinach and eggs are a nutritional powerhouse! This mild version is great for you or your children every morning and perfect for a green holiday (St. Patrick’s Day; Earth Day).

INGREDIENTS
3 eggs
1 handful fresh baby spinach
sea salt
raw goat cheese (or dairy-free alternative)

DIRECTIONS:
Preheat oven to 375 degrees.

Blend the eggs with a handful of spinach in your blender until smooth. Pour the mixture into a small pan and cook in the oven for approximately 10 minutes, or until the edges start to pull away from the pan. Sprinkle with sea salt and some raw goat cheese or your favorite dairy-free alternative. Fold. Put the omelette back in the oven for 2-3 minutes to set.
